Canned Venison Cubes

    Has anyone ever canned venison cubes in a pressure cooker. I had some once and it was incredible but don't know how to do it.

    I have not attempted it yet but was told how by someone that has done it a lot. Put the cubes in a quart jar and a tsp of salt, put the lid on and pressure can. I would assume that for something like this (low acid) it would be a standard 90 minute process. He told me that the meat would make its own broth when I asked about adding any liquid.

    A buddy of mine does it and its phenom. I have a pressure cooker and need to ask him exactly how he does it again.

    Rob PA served us up some canned venison from his mom .... it was so freekin yummy!!!!!

    Thanks Sarge, and everyone that's what I was looking for. Yeah it looks gross, but man it was good and so very tender.

    I actually canned a few jars for the 1st time this past November. I was kind of scared to eat it, but I opened the 1st jar last week. It was GOOD! It does look kind of gross, but I'll definitely do that again. I actually pan sauteed mine first with a little bit of coconut oil then canned it in broth with onions & I don't remember what else. You can can it without cooking it first, though. I think the main thing is to follow the directions that came with your pressure canner. If I remember correctly, the processing time was 90 minutes.
