    This stirs me beyond words as I grew up hunting behind a beagle with my Dad, chasing pheasant and rabbits.... that was without a doubt my favorite type of hunting...

    I'll try about any recipe you've got, I would really like to enjoy eating them! I have two that are pretty good, shish kabobs and jerky.

    Maybe it's because we are spoiled with being able to eat chukars, pheasants, huns and elk :D

    But seriously if anyone has a duck or goose recipe that is good, I would love to give it a shot.

    ANY duck or goose recipe can be good provided you do not cook past Med rare. Otherwise yes it will taste like poo regardless..

    The only thing I cook past medium rare is pork and chicken. Come on Ash, send me a GOOD one, not just edible, good :D

    I agree with Dubbya, I love to shoot ducks and geese but have never found any of them to taste very good. I have tried nearly everything. If you completely overpower the duck flavor with marinades and injections and sauce, etc., it is edible. But then, what is the point.

    Smoked duck is the exception in my opinion. With some crackers and cheese and a glass of wine, its not too bad.

    I'm jealous Dubs. We use to have a great pheasant population in Ohio but there are very few of them anymore. It's probably been three years since I have seen a covey of quail. I would love to take the old Browning out for some birds.

    I haven't had a way duck or goose isn't bad. Hell sometimes I just slice up a duck or goose breast and sauté it in a pan with mushrooms and onions for lunch. Damnit I can't wait for duck season to come in. 9 more days...
