Bacon Wrapped Backstrap

    Took some backstrap and tried a recipe I found online. Backstrap is marinaded in Caribbean Jerk Marinade. Butterflied it open then put cream cheese and mango chutney inside. Finally wrapped the whole thing in bacon. Turned out amazing. I highly recommend. Here's a couple pics to get your mouth watering :)

    Why mess up a perfectly good back strap? Seriously, am I the only one that thinks if you have to doctor up a back strap you are doing it wrong? At the same time it does look good! :lol:

    I do sort of the same thing. Take the backstrap cut into 1" chunks then marinade it overnight, take cream cheese, jalapeño a chunk of meat and wrap them all together with a strip of bacon put a toothpick thru it to hold it together. Throw them on the grill til the bacon is done and it is delicious!!!

    Looks good but I would never do that. I greatly dislike people wanting to throw bacon on everything. Don't get me wrong, I love bacon - but you're doing the other flavors a disservice.

    Nope I just use olive oil infused with truffle oil and some seasonings flash sear it in a hot cast iron pan, does not get any simpler or better.

    Most the time I do just throw some salt, pepper, and then throw it on the grill or pan. Nothing wrong with trying new things. Am I gonna cook it that way every time now? Heck no. But it's nice to change it up occasionally.

    May have to try something similar to this...may put something different inside though but definitely will wrap it in bacon for a change up. Did you put it in the oven?

    It does look great, and I may try it someday, but I tend to side with heckler on this one.

    Nope I had it on the grill for about 30 min or so. Next time I want to try cranberry chutney
