Anyone make wine?

    I decided to get into wine making in early spring this year and I have two 6 gallon carboys bulk aging with cabernet sauvignon from juice kits that I plan to bottle in December. According to my last hydrometer reading they are both going to be in the 13.2% - 13.5% ABV range. I was just curious if anyone else made wine, what they make, or want to share pictures or talk about wine storage. I'm going to have about 65-70 bottles come December and I need to start figuring out a storage rack.

    I have some hill billy peach wine going. I had way to many white peaches this year so tried my hand at making a little hill juice....

    Pretty simple really. I used 4 lbs sugar -- 1 gallon mushed peaches- one gallon fresh spring water - juice of one lemon and three table spoon yeast.

    I have a 2 gallon glass jug filled with the nectar, and have a perforate balloon as my gas release mechanism.

    Never used a hydrometer before--- and plan on bottling it in quart mason jars! :)


    35 more days till its ready to rack!

    Nice! When did you start it? I started one in April and another in May and I plan to bottle both in December. I racked once in July, I will again this month, and then one last time just prior to bottling. I've been adding potassium metabisulfite after each rack and storing in the basement to prevent any bacteria and it's gotten increasingly better after each taste test. I'm pretty excited to have it all in the bottles.

    Started it August 6th. Take 90 days to set. Should be around 16%. I never taste it till I rack it the last time! I make sure and clean everything with a diluted bleach wash. Never had any issues with bacteria. Will be starting some cranberry as soon as this batch finishes...
