most of the public land is NW and totally different than the eastern part of the state. Ive only hunted public out west once and that was rifle. Shot a mule deer doe, tasted like crap pretty much all went into jerky and sausage Animals on sage taste different than Animals on corn and soy beans
That is a very true statement! Mule deer out of a sage area or even just open brush just do not taste that good, very gamey. I've had Mule deer that was taken from an agricultural area and they eat okay, what they're eating makes all the difference. Fun as heck to hunt, not so much to eat for sure.
Mule deer taste great if properly prepared. I made mule deer back strap steaks last weekend. My wife and kids loved it. Two things needs to remembered: 1) Mule deer are not white-tails, they will always taste a little different. If you expect mule deer to taste exactly like white-tail, you will be disappointed. 2) My limited experience with Mule Deer would suggest that the meat needs to be deboned and cooled faster than white-tails. The first mule deer I ate as a child, the hide was left on for a couple of days even though it was gutted immediately. That definitely made the unique mule deer flavor stronger compared to the two I have eaten as an adult. Both of those were completely deboned the day of the kill and tasted much better.
Got my Montana archery antelope...it's a high draw rate and really just a reason for me to get out and chase something around. Fun but frustrating hunt!

On Mule deer from a sagebrush area being good to eat, no matter the way they're cooked. At least the ones I've tried from the southern part of Idaho anyway. I have no problem having a mature conversation about it, it's not that important to me ha ha. I've had Mule deer from agriculture areas around North-Central Idaho and they are mild, a bit different than whitetail but not bad eating. But they taste completely different from a sagebrush area. I've tried them all kinds of different ways, none were anything I care to try again. Even as jerky it wasn't that good (I find goose jerky to be the same). I've had antelope from the same areas, it definitely has a fairly strong gamey taste to it, but not bad and I'd eat it again. Some gamey flavor doesn't bother me, but that stink up the whole house gamey is completely different. I'd be curious what type of area the Muley you've eaten came from? There are some areas around here where they just don't make good table fare, and I've had many conversations to the same tune with others that have hunted and/or ate them from those areas.
