For the record, I am putting a second batch of Tony's Jerky in the dehydrator after I get out of work today. The smell is delightful while dehydrating and the taste afterwards is even better. Actually the smell isn't strong as other jerky's I've made, at least it wasn't for me last time I made it.
tony, how long does the jerky usually keep after you've pulled it from the dehydrator? can you batch process a ton of this stuff and then vacuum seal it or freeze it? i've never tried making jerky but i'm feeling pretty inspired right now
Honestly, it is never around long enough to worry about, but my guess is it would last a long time vacuum sealed ...
OK, I'll be trying this in a couple weeks. I've tried mixing a marinade with beef a few years back and omitted the sugar thinking it would be too sweet. I don't know how sweet it would have been, but cutting it out definitely was not the smartest of moves. So a question for all of you. I'm not real big on sweet jerky and 6TB honey and a cup of brown sugar sounds like a lot. Sounding like a lot and tasting like a lot are two different things though. Is it a noticable sweetness or one that melds everything together?
Well, its way too sweet...that's why everyone loves it so much :D All joking aside, this jerky is so deep in flavor and balanced ... that recipe makes alot of jerky ... it is perfectly balanced ... smoky, sweet, heat, tangy.... just make the recipe as it is and if you feel it needs to be tweaked, then tweak it ... I think the only tweaking you will do is adding heat if you like super spicy tho...
Definitely not to overly sweet. It has just the right amount of balance between sweetness, tangy mustard flavor and smokyness. It is probably one of the best home jerky recipes I've ever had and I've tried a lot of different ones. Just do it and you'll be happy.
