Sharpening skinning knifes

    Hey I was just woundering what form of sharpining works the best and what will get my knife the sharpest what do u guys think ?

    Get a good steel and learn to use it. A knife that is already sharp can be made scary sharp)

    Been using ceramic sticks for over 30 years and never had a deer complain yet :moose:

    I sharpen every knife in the house with them.

    I use a lanky and can get razor sharp blades, touch up on a hone steel or leather strop and they are scary sharp

    I use a work sharp sharpener and the thing puts a scalpels edge on every knife I own

    Doesn't a steel just straighten the edge? (Granted this may be all that's needed for a hard steel blade).

    Vs a stone or ceramic that work/grind some of the edge to put the appropriate beval on the blade?

    I go to wal-mart and get a sharpening tool. I spit on it and sharpen my knife at a 45 angle each side. It has a course and fine surface. A trie stone works well too. If you don't want to spit on it use mineral oil need to lubricate the surface. 21 years of cullinary helped me. Also every time you put the knife down run it down a knife steal keeps the 45 edge on the knife.

    Yes a steal only straightens the 45 on the knife. You need to sharpen it on a stone.

    22 - 25 degrees is recomended for a knife, not 45

    Yeah, that's the first thing that came to mind while reading this thread. Then I figured that Keith must be talking about the overall angle from facet to facet being 45 which would give you a 22.5 degree angle for each facet.

    I have a Resort so I have 11 kitchens full of knives and lots of my own. In the last 35+ years I have collected many (I mean lots) of stones, sticks, lansky, gatco, electric sharpeners. A few years ago I got a Work Sharp. The best thing I have used by far. It takes just 1-2 minutes per knife and they are very sharp. When the belt gets full of metal filings I just replace it. I would get the Ken Onion one if I was you. OR you can buy mine and I will upgrade to the Ken Onion model.

    I enjoy sharpening knives and have many different types of sharpeners including a Work Sharp, and a quite large knife collection... that being said HAVALON all the way!

    wicked edge knife sharpener. truly shaving sharp. pricey but I go down to 0.025 micron.

    Edge Pro Apex III kit and a charged leather strop is dynamite. A Spyderco Sharpmaker for quick touch ups when necessary. Gatco and Lansky kits work fairly well, the Gatco is the better of the two in my experience.
