I have a PSE Stalker. The string that came with it gives the bow a 6 3/4 brace heigth when the specs say it should be 8 1/4 inches. Can the string be twisted to the right measurement, or is this string way too long?

Measured, and it seems to be about 4 inches short. I guess it's the right string. Not sure why the difference in brace height though. I measured from the deepest part of the grip back to string. Thanks for your help.

Somewhere on the bow it will tell the poundage and the amo length of the bow. Whatever it says the amo length is.. the string's true length should be approximately 3 inches shorter for a recurve.

I doubt that it has a flemish twist type string, probably an endless string. You can twist them a little but sounds like the sting has stretched..

throw 10 to 20 twist at it and see what happens.
if it kinks then you twisted to much.
i generally build my strings 3" shoter then AMO
but have used many stings that were 4" shorter

Yes you can twist it to achieve the proper brace height. The string that came with it will stretch some so it may take a day or two to get it set up right.
