Been talking about one for years, just never pulled the trigger with hearing how long it takes along with a constant watch.... I heard wrong. My first smoke was 7 hr's on a brisket flat (turned out great) So yesterday I did a deer roast and some backstraps wrapped in bacon....holy cow was it good.
