    I was on the fence about a new grill. Lots of buddies have different types from ceramics, wood and pellet and I ultimately settled on the pellet (Traeger) for the sheer ease of operation and precision temp. I have a small electric smoker and a large charcoal grill and felt like this would be a good compromise. So far I am very happy with my decision. I got the new 575 pro. Kind of small looking, but it is all the grill I need.

    Only thing I will reccomend on the bacon, slicer.

    A good brisket/carving knive can get OK results but that pork belly gets soft quick and cuts get uneven.

    I'll have a slicer before I do another batch.


    Here is the recipe I followed, I did the wet brine. Did two pork belly's so doubled the batch for a bigger container to brine/cure them in.

    Starts out sweet and ends salty. Very good regardless.

    I have the Packer G in the receiver.

    I did the 45 minute season of the grill trying to decide steak or pork first grill tomorrow

    Eric, did you enjoy the directions in the owners manual from assembly to curing every step is planed by beers needed to complete the process? That is when I realized this smoking thing might be right in my wheelhouse.

    I certainly didn't complain and it definitely is part of the "process." I have to be honest tho, I brought mine home assembled already bc I had meat to cook. I was surprised they let me out the door with the floor model. Curing time was perfect for getting the meat to room temp while downing a couple beers tho.

    I do have one issue. If you are going to build a pellet grill make the pellet bin big enough to hold an entire bag of pellets.

    My wife enjoyed the pork chops so much she cancelled the easter ham order, we are having pork chops, steak, and chicken instead. Also the debut of Loaded Corn Casserole. Perfect with anything smoked or grilled.

    I don't drink beer to piss, drinking 2 beers is a waste of beer. Drink water, tea, kool-aid or milk. Same result.

    If I wanted to drink beer for the piss I'd drink N/A. I can't even drink a 6 pack, same thing. All the piss none of the buzz.

    I think we're on the same page, just a different paragraph :lol:

    I'm just saying drinking 2 beers isn't justifiable. If I'm going to drink one beer, it will be followed by at least 8 more, otherwise it serves no purpose.

    I don't drink beer for the sake of drinking beer. I drink it the same way I used to smoke weed. To catch a buzz or get high, anything less why waste it?

    One of my pet peaves is showing up somwhere and they ask if you want a beer. Drink a few and they run out, all that wasted effort to catch that buzz and you got a piss and some groggy eyes to show for it :lol:
