Lets make sausage

    anyone use any recipes from lets-make-sausage.com?

    narrowed my options down to
    "genuine homemade bratwurst"
    "knockwurst for garlic lovers"
    "venison recipe smoked kielbasa"
    "basic sweet italian sausage"

    thinking will do 2 of these, 1 brat option and 1 of either the kielbasa or italian. ill use my deer pork mixture then their spice recipes.

    ended up going to Frisco spice in omaha to get my spices and ended up getting their mixed stuff.
    way cheaper than a box of stuff from cabelas.
    mix for 25 lbs about $3.00
    natural casings for about 25lbs of meat $7

    cabelas stuff was more than double in cost. this Frisco spice ships spices mostly to restaurants and butcher shops but does sell these smaller packets too. they also ship all actoss country

    What kind of mixture of fat to venison are you thinking of using for your bratwurst? Just curious my dad and uncles used to make some but I was far too young to remeber the mixture ratio.

    I do about 25% pork with a little extra fat with my venison brats.

    honestly i shoot for halfish
    i had 20 pounds of deer to grind, and i had 15 pounds of fatty pork shoulder

    well i done did it, ill say the Italian sausage is amazing, the brats are just ok, they needed some mustards...

    id highly recommend FRISCO spice and their fennel seed Italian mix, we grilled a couple of the ones that ended up too small or had a casing issue, and i have pleased with turnout

    to anyone interested frisco spice is a butcher and restaurant supply company out of omaha, they deal with machines like large grinders mixers, bulk spices ets.
    you can also get their spice mixes pre made and portioned for 25 pounds. they ship all over the country

    its that time again.

    I have 27.5 pounds of deer set aside for brats, local butcher has good price on pork and will grind the pork for me for free since in buying a bunch.

    this weekend ill grind the deer which is already cubed and in the freezer, and get some brats made up!

    Man those look tasty, I think I might try and make some if I get a deer this year. I tried making summer sausage and breakfast sausage last year for the first time, came out pretty good!

    got it done last night.
    just over 50 pounds of brats
    just over 30 pounds of Italian
