What are you cooking with your game meat?

    My wife and I are constantly trying new recipes with our deer and elk meat. Short of a few chicken breasts here and there, game meat takes up nearly 100% of our meat intake. I thought it would be a cool idea to have a running thread where we can all post our nightly meals to share and create ideas.

    Tonight's dinner is on the stove now. We call is goulash yet it is far from that, lol

    1lb of game burger
    1 can diced tomatoes
    1 cup of macaroni
    1 cup of water
    1 cup of shredded cheese
    1 packet of onion soup mix

    Combine burger and soup mix in a skillet and brown burger. Once finished, combine water, noodles, and tomatoes and summer until the noodles are done. Spread shredded cheese across the top of the dish and let it melt it. Add some Sirachia and done!

    Being as summer is approaching I do a lot of grilling.

    My new favorite is to take tenderloins and wrap them around a cream cheese filled jalapeno. Then wrap all that with bacon and soak in your favorite marinade. Cook on low heat until done and enjoy.

    Best way to eat them! A good microbrew and Montana Bites (as we call them) are a great way to enjoy to a summer evening.

    I usually eat them when they are prepared like steak. I wont eat Gulash unless i absolutely have too but my mother makes it in chili, but I don't eat that either.

    For deer

    ground meat = chili or tacos
    roast = ...roast
    backstrap/tenderloin = grilled to medium rare

    Tomorrow's plate will be a grilled and stuffed deer loin wrapped in bacon! Never tried it but I can't imagine it sucking.

    I think i'll stuff it with cream cheese (of course) and sauteed onions and bell peppers with a heavy rub on the outside.

    We take most of our deer and grind it. You just can do so much with ground meat...chili, spaghetti, tacos, lasagna, burgers, hamburger helper type meals, etc. I did take about 20 pounds of ground meat and make a smoked summer sausage.
    We've got deer back straps thawing in the fridge for tomorrow night!

    I really enjoy taking a whole vension backstrap and filleting it into one large "sheet", covet it in ham, mushrooms, and pepperjack cheese then roll up, wrap in bacon, and throw on the smoker...amazing!

    Experiment underway.

    1/2 sweet onion diced
    1 green pepper diced
    2 cloves of garlic diced
    1 deer blackstrap
    Cream cheese
    Bacon
    Salt and pepper to taste

    Throw a small pad of butter in a skillet heat on high then begin sautéing onions, peppers, and garlic.

    While onion mixture is cooking, butterfly deer loin and cover in cream cheese. I find it easier at this point to lay all of your bacon strips out before stuffing the loin.

    Once the onion mixture is finished, fill the backstrap, roll over, and pin the bacon.

    I will be throwing this on the grill in about a half hour. I would also recommend covering your grill grate in foil as this will get messy!
