While my family likes the ground and shaped jerky, I like sliced jerky. I use Shaggy Dog’s ™ jerky marinade. Its made right here in Janesville, WI by Chris Cass. Shaggy Dog’s ™ marinade is pre mixed and ready to use. Slice your venison as thick or as thin as you like. Because the jerky seaoning comes in a liquid form, the coverage and distribution all parts of the meat is excellent. Simply pour it on and mix the strips of meat by hand and refrigerate 24 hours. After the meat is seasoned, use any brand of dehydrator to dry the strips to the desired moisture level. I built a dehydrator that will dry 50 pounds of jerky at one time. This batch is only 17 pounds. It took 6 screens like this. I dehydrated this batch for 8 hours. When finished. The 17 pounds was reduced to 7 pounds. It was just short of filling a regular size paper grocery bag. The last step is to vacuum seal the jerky and freeze.
Man that looks good! Just finished my last batch and im patiently waiting for the season so i can replenish the freezer. That dehydrator is awesome! The round one i use has no where near that capacity. I need to step it up to a big one.
RC....Didn't do make a post sometime back that showed how to make that dehydrator?? Seems like I remember seeing that one. If so I would love to try and make one....
I've never been a fan of marinades(liquid) for jerky seasoning but that is some good looking jerky there.
