    Never been to Costco before. First time yesterday. Found these for $39 yesterday. Making them for the fam on Monday. [​IMG]

    Last time I made St. Louis style. Think I should expect anything different with these?

    Trying the infamous Mississippi pot roast I have been hearing about so much on smoking forums. Doing this one in the crock pot to make sure I like it before going through all the smoker effort.

    about 6 hours in and fairly tender, believe it will be done in 7-8 hours total cook time rather than the 10 hours called for.

    Not too bad on samples.

    Pretty simple as far as recipe

    Chuck Roast(or one of your choosing)
    Dry Ranch dressing packet
    Au Jus or Brown Gravy packet
    Half stick butter
    Jar of Pepperoncini's

    Man, that’s how my mom always made hers. Except she used a dry packet of Lipton onion soup mix as well. Delicious!

    If/when I make this again, I'll definitely be using a different cut. Likely a top or bottom round trimmed up. The Chuck Roast is just too fatty for this, especially when adding in the butter. You could trim one, sure, but you're paying the same price per pound for the fat you are discarding as you are the meat you're cooking. Basically make it like you would an Italian beef, just a bit more savior in flavor in the end.

    I ran out of rub and am looking to buy some more just to try something new. What rubs are you guys using? What kind of sauces? Can be anything, doesn't have to be pork related, etc.

    Meat Church is a good brand. Their Holy Voodoo is pretty good.

    Usually when I get rubs I go through Atlanta Grill Co. They ship lightning quick and usually toss in an extra goodie when they package it for shipment. The AGC line of rubs is pretty damn good too.

    As for sauces, I've really come to like Blues Hogg brand. Their Tennessee Red is a good mopping sauce and would be good to moisten up some pulled pork. They have several different blends, all but the red are fairly sweet.

    Still trying to perfect my own sauce right now. Need to make another batch, been awhile.

    Have some backstraps and tenderloin marinading to make on the grill tomorrow. Can't wait!! Yes I do like most of my venison marinated.

    Pretty sure I'm going to run to Costco after work tonight and pick up a brisket for this weekend. I think I'm going to get up at the ass crack of dawn to go fishing on Sunday morning, which is perfect timing to toss it on the Rec Teq before I leave. When doing brisket I'm a straight salt & pepper kind of guy. No fancy rubs. S&P is the choice for me.

    When it comes to ribs or pork I'm down with the Meat Church stuff. I'm a massive fan of their Honey Hog flavors. That stuff is my jam.

    They actually have a good sell going on their line of runs. Not sure if sold out yet, if I didn't have 15 bottles or more and a 5lb bag of Killer Hogs rub I'd order one :lol:
