    A fella could get fat just reading the recipe, I may do cream corn gravy on those cheesy garlic mashed potatoes and add my famous coleslaw with crumbled bacon in it.

    Speaking of the recipes main ingredient is the mature doe that is hanging since Sunday night, I called off processing tonight because temps will be a bit warmer tomorrow. Looking at conditions, conditions are really good for hanging a few more days. Temps below freezing slightly at night and highs in the mid 40's. Only regret I did not get honey on the inner loins.

    I did backstrap stuffed with sautéed onion, apricot and cream cheese. Smoked then a quick sear on the grill. Was good.

    digital electric only way to go for modern smokers, set tm, set time, ad chips go mow lawn or drink beer or chase wife around house

    My daughter has an electric one, she won it did not purchase it no idea the brand or specs. They struggled to keep it up to temperature on a cold windy day.

    more than likely a very low end product, have smoked a turkey at 15 below zero

    I have two coolers with fresh venison chilling, I rushed the process because I was concerned about the temperature. My hands were so damn cold skinning and cutting the meat off, guess I should not have been concerned. I use a knife to cut meet off but I use my hands to seperate the muscle groups and pull meat off the bone.

    I saved some of that thin muscle in the front quarters, trim the fat off the thin meat and going to marinate it. sorry smokers a cast iron pan and bacon grease is what it will be done in. I will buy a smoker soon.

    Venison soft tacos for supper, with bacon fried peppers and onions. yeah we had tacos on Tuesday but these are grande on Thursday.

    My buddies all swear by their Traeger pellet smokers. They have bluetooth control and you can monitor and adjust from your phone while you sit in your house or drive around looking for deer. I have not made the leap yet because I just dont have time to start another hobby. But, I certainly do enjoy stopping by to help them sample their latest creations. Whole deer loins that have been marinated and then smoked are wonderful. Finish them up in the oven.
