Venison Chili Recipes - Post Up!

    Well boys, let's have 'em. I'm looking for the best venison (or other game meat) chili recipes. Post up what you've got then we'll take a vote on the best one and send you a free Bowhunting.com goodie pack.

    Ok, here goes:

    1 TBSP butter
    1 1/2# ground venison
    1 tsp Lawrys
    1 green pepper, diced
    1 large yellow onion, diced
    2 TBSP chili powder
    1 TBSP cumin
    1 tsp dill
    1 tsp basil
    1 tsp oregano
    1 garlic clove, minced
    1 or 2 chipotle peppers, chopped (can substitute jalapenos)
    1/2 can or bottle of beer (BUD, MGD, Bud Light, etc...)
    2 14.4 oz cans of stewed tomatoes
    2 14.5 oz cans of pinto beans
    1 14.5 oz can of tomato sauce
    1 11.5 oz can of V8 Juice
    1 1/2 TBSP worcestershire sauce
    2 TBSP of your favorite BBQ sauce

    In a large stock pot on medium high heat, melt butter. Add venison and Lawrys, lightly brown. Add onions & green pepper. Saute until onions are translucent. Add all seasonings and chipotle peper, stir continuously for a minute or two. Add 1/2 of beer (drink the other half :tu: ), stir for 2 minutes. Add remaining ingredients and bring to a boil. Reduce heat to low & simmer for 1 hr. stirring it on occasion.

    Here's the winner of six chili cook-offs Make up a batch and see if it aint the best.
    Afterburner Chili

    INGREDIENTS:
    • 2 lbs of ground venison
    • 2 lbs Hot Italian Sausage
    • 2 lbs Thick Sliced Bacon
    • 2 Jars Medium Heat Salsa
    • 1 Jar Hot Salsa
    • 3 Large Onions
    • 1 T Liquid Smoke
    • 6 T Chili Powder
    • ½ T Cumin
    • 4 T Garlic
    • 1 tsp Cayenne Pepper
    • 4 T Grape Jelly
    PREPARATION:
    1. Slice the bacon into strips approximately one inch wide.
    2. Chop the onions
    3. In a large stockpot, fry the bacon over medium heat
    4. Add in the onions, mixing constantly until the onions are sautéed
    5. Add in the sausage and continue mixing until the sausage is browned
    6. Add in the venison or hamburger and continue mixing until browned
    7. Add in the 3 jars of salsa and jelly, then continue mixing
    8. Stir in the liquid smoke, chili powder, cumin, garlic and cayenne pepper
    9. Lower the heat and simmer 30 minutes
    10. Transfer the stockpot to the refrigerator over night.
    11. Transfer the chili to a crock pot
    12. Slow cook for 8 hours
    13. Put a piece of corn bread in the bowl and top with the chili (really freaking good this way)
    You can substitute garlic powder for the garlic if you have to. But if you do, cut the amount used back from 4 tablespoons to 1 1/2.
    CAUTION: This aint no pansy foo foo chili. If you can’t take the heat you can use mild salsa, but first you must turn in your man card! On the other hand, if this ain't hot enough for you, use 3 jars of Mad Hatters Hot Salsa. Not responsible for gastro intestinal distress, hopitalization, or death.:evilgrin:

    I have won several cook-offs using Hormel. Seriously... here's the twist. Use it as your base and add your own touches. Its easy and everyones raves while I am laughing on the inside.

    1 Gallon can Hormel
    1 pound browned Ground Venny
    1 pound browned Sausage (pour grease in as well)
    2 Large Cans Hot(for my taste) Rotel
    1 Large cans Black Beans (already cooked)
    1 Large Can Red Beans (already cooked)
    Extra Bell peppers and onions to taste

    Retired from the Air Force 4 years ago. But, the kids moved out 10 years ago. Had plenty of time to come up with some good eats.

    I retired from the AF Reserve in 08 after 25 years as a fulltime Air Reserve Technician. I did 5 years AD. Same job, different benefits without all the moving around but way more traveling. I was an aircraft electrician.
