We like Granite. This type is called Uba Tuba. Pros -It is durable, easy to clean and you can set hot pans on it and not hurt it. It is heavy and has a great finish. It is a little more expensive than some stones, but it is worth every penny. Cons - Make sure you like it when you decide on it. It lasts forever. If you glue it to the cabinet, you will have to nearly destroy the cabinet if you ever try to change it. You can chip it if you hit it really hard with a sharp oblect like a meat cleaver. Even though it is the same type, different stones look different. Make sure you get it all at once and not add pieces later. They may not match up quite right if you buy them at different times or from different places. We got the Bull Nose edge on ours. Here are some pictures I took while they were building. That's the same pattern we chose... love it. No cons except its permanence as you stated. A company out of Atlanta installed it, sink and all, 50% cheaper than we could purchase the stone at HD or Lowes.
I have granite in my house. The only thing I would change in yours same would be a larger sink and a more 90 degree faucet. I have a small sink and kitchen right now and it is annoying

This is the bathrooms sink And this is the deep sink faucet Still waiting for confirmation on if someone will buy 100 acres of our land to close the deal and break ground the end of this year or there goes my dream house. Granite is a great option. I would avoid marble in the kitchen. Marble is much more porous than granite, which means it can harbor bacteria easier. Not something you want in the kitchen where you prepare food. Your other options would be engineered stone, which is also a great option. It has basically all the positive function of granite, generally at a little cheaper price. It just doesn't look as good as granite. Then you have solid surface like Corian. It's also a really nice product and can be installed completely seamless. Even the sink is integrated if you choose. It's softer than stone, so it will scratch up. Any damage can be repaired unlike stone products. Then you have laminate. The best thing I can say about laminate is that it's cheap and it does the job. If it's in your budget, granite is the way to go. There's just nothing that can replicate the look of granite.
What room is this for? Kitchen? Stay away from marble. Granite is....ok. I think granite is a bit out of style these days. When we were looking for countertops, we really liked soapstone, but we did not like the price of soapstone. We finally went with concrete countertops. They look great. Nice and thick. Some other options are recycled glass and stainless steel.
They can make concrete look like anything...granite, marble quartz, etc... Since I have put or am putting money into a shed and a floor, we are having a local artist to come and paint a marble pattern on our counter tops and then lacquer it ...only gonna cost $550 compared to thousands for real stuff ....I will post pics when it is done next month
Soapstone has treated us well, however it does require a good rub down with oil a couple times a year. It has more a softer feel to then our the granite top we had. A knife will score it so some care needs to be taken, and it can scrape china if your rough enough. All that said we love it. Go with a one shade lighter as it does darken oven time. It was several years ago but it cost me about 80 a foot installed.
Concrete is fantastic...when we do ours after the 9 million other projects we will be doing concrete....put some in with a friend in his house and they are great... looks wise and functionality wise....i love em
