Squirrel recipe?

    How do you guys cook your squirrels? I've only made them in stew and it was great!

    Score the meat to the bone, coat with a bit of cavenders, fry, the put it in a crockpot with a little water in the bottom (keep the meat out of the water, I use aluminum foil in the bottom crinkled up) cook it on high for an hour or 2. That makes the tough ones tender and the tender ones melt in your mouth

    I fry it, that's it. My kids destroy it when I make it, and my son regularly asks for squirrel for dinner. The look his teacher gave me when I picked him up from school last week was hilarious. He had squirrel for lunch at school, and no on believed him. When I told his teacher it was squirrel, she was in total shock!

    We usually do this. Quarter and boil in chicken stock for 15 minutes. Remove from stock. drench in egg/milk solutions and batter with seasoned flour. Pan fry with a little oil in the bottom. Turn often enough so as not to burn the coating but to cook through. Remove squirrel from frying pan and using the drippings make a milk gravy. Add some biscuits and enjoy. :tu:

    I cook it myriad different ways, because I eat a lot of it. One of my favorites is to substitute the salmon for squirrel meat and make croquettes.
