How many have venison bacon made? I had tried it before and really liked it and since my son does not like summer sausage or sticks but loves bacon I figured I would have some made from his deer.

I'm not sure the exact way to make it, had a processor make it. It is ground with pork, formed, smoked and then sliced. It is a lot like the old beef bacon Sizzlean. The packaging says fully cooked but it's not very good uncooked. Cooking it really brings the flavor out and cooks the added pork fat(possibly ground bacon?) out and it crisps up pretty good. That's how mine is anyway, I've seen they sell cures and such to brine your own and slice it from whole muscle. Have never tried it that way though
I like 5% fat mixed with my venison burger so I use 1 pound of bacon for every 5 pounds of meat, mixed in and ground together with the meat. MMMMMMMMM GOOD!
Turasky's and/or Y T Packing in Springfield, IL makes it. For every 10 pounds of deer meat you take them, they turn it into 20 pounds of sausage. I just had 6 pounds of trimmings turned into 12 pound. My family loves it. (Turasky's is really good however). So good my wife is sending me out today because we are running low and wants another doe to filly up our freezer. It is really not like Canadian Bacon, but somewhere between turkey bacon and fried bolagna? True about over cooking....just warm it up, no need to make it crisp. Great stuff!!!
I am curious to know how venison bacon is made. I don't eat pork or anything with pork fat. I add beef tallow in all my venison sausage.
If you don't eat pork then you are out of luck. Venison bacon burger is just venison with bacon added rather than beef fat.
I think you may have missed what I asked about. I am wanting to know how to make "venison bacon" not venison bacon burgers. Tom(MONSTER RAXX) asked initially how many have made "venison bacon".
Yep, that's who I went through. Their hot dogs are pretty good as well. They must have changed the recipe on their kielbasa as it wasn't as good as what I had through them years ago
