This was my first time making snack sticks but it surely won't be the last. Previously the most complicated thing I've made with venison was just jerky. This process was much easier than I expected. Some of you may have seen on Facebook but thought I'd post it here too: I used Hi Mountain's Jalapeno seasoning and curing kit and added diced jalapenos and cheddar cheese. Followed the directions on the package and mixed in my additions. Then used the jerky cannon to stuff the casing. I put them in the oven for about an hour and a half at 200* and then another 2 hours in the dehydrator. They came out perfect. Friends and family loved them and definitely one of my wife's favorite venison fixings, which is saying something.
That made my mouth water. Why did you put it in casing instead of dehydrating it? Not trying to criticize or be smart, just curious.
I wanted them to snap when you take a bite, i.e. snack sticks rather than make jerky. Mainly for the consistency. I have a very different and much more preferred flavor for when I do jerky. Next time I might try and smoke them.
