Ok lets hear some recipe's for some homemade guacamole you like best. Wondering if I am missing something. My wife uses 4 avocados, 1 jalapeno, 1/2 red onion, cilantro, lime juice and salt.
I've never had guacamole that didn't have tomatoes in it. I make guacamole the lazy way. I mix pico de gallo with mashed avocados or even just red salsa from a jar with mashed avocados. Season to taste. Fast, easy, and yummy.
What Christine said the first time, Tom, but roast the onions, tomatoes and peppers first. Maybe double the peppers for my tastes.
I'm not a fan of garlic, but I thought it was an essential ingredient in guacamole. And I've never seen the stuff without some chopped tomato in it.
I have never seen tomatoes in guacamole ever in any part of the country in any mexican restaurant I have been too.

Avocados, fresh squeezed lime, course ground kosher salt. You can add all sorts of things to guacamole, but you don't have to. K.I.S.S- keep it simple stupid. BTW, the Gopher State is really great.

Honestly...if making a batch for myself personally it'd be a two or three jalapeno type or perhaps just one habanero depending on the heat of my habs that year.
I never really gave guacamole a try until the past few years. We make it with avocados, red onion, garlic (sometimes garlic salt instead), and some lime juice. I've added jalapenos but depends on who else will be eating it on whether I add them or not.
