I would like to learn how to butcher my own game, deer in particular. Can anyone recommend a good DVD or a detailed and clear book on the subject. I have looked a couple books at the book store and was unimpressed with them as they where not real clear.

Yep youtube is a good place to start. Once you get started its really not as hard as you think it will be.
Always butcher my own and can do it in less then an hour. Hardest part was always skinning. Saw a video on yt about skinning with a golf ball, now its that much faster. Google "skin a deer with golf ball" and see how easy it is. Dont have to saw off legs and less hair on the meat. Really like custom cutting my own steaks an roasts.
Ya dont go cheap on the grinder or you will regret it..........we use a cabelas 1 1/2 hp and the thing is a monster. will grind it as fast as you throw it in, and you dont have to cut it into small chuncks..We have over 40 deer through this one and still going strong!!!!!!!!
http://www.youtube.com/watch?v=I5tYvrw3dvA Here is my favorite trick for skinning. If the deer is warm still then I would forget it.. The first deer I shot was in December so she was really cold by the time I got her home and this made skinning her a lot easier!
The easiest way we have found to skin them is to hang by the back legs, and work the skin down from the bottom of the tendons to the hind end cut off the tail and to speed things up take your knife and stab a handle about where the spine was in the fur to pull down on it will make the whole skinning process that much faster. after rifle season we are usually hanging over 10 deer to butcher in one night and also dont forget to keep a sharp knife for every move you make, I work in a restaraunt and speaking from experience a dull knife is a danger and a waste of time. also any yt video that you can understand will probably help if you take your time
