Brine for deer steaks

    Gentleman, this is the best tip I have ever gotten. Guy came into my work and swore by soaking his top & bottom rounds in about in salt water for a few days at least, we let ours soak for 5. Totally broke down the meat, tasted fantastic. Oh, the steaks were from a buck in rut, so I had my doubts haha. Left all the good flavor, took out the bad, and tenderized it to backstrap texture. I used a cabelas old fashioned maple brine mix, 3/4 cup per 5 lbs, never changed the water. Olive oil, Oregano and lemons on a hot grill, and your set. try it!
