This is a good video, but it looks like to much work to me. I cut the backstraps off in one piece and don,t use a saw for anything.Q
Cool video. Not the way I do it. Don't cut the back straps. I pull them out first whole the decide if I want to steak one out. I always keep a whole one or at least two halves. I have a different technique for the rear quarters as well. This method screws up some of my favorite steak cuts.
Not really the way I have done it either but I was impressed with the efficiency and cleanliness. I just remove the lower shank on a shoulder, for example, and cook it whole. But I thought it was informative to see how a real butcher does it.
Glad they took the time to make the videos as they may help some guys out ... The guy that is doing most of the cutting is a real hacker...sorry but he is way to sloppy.
No problem on that we been using them for years with a meat/ bone blade. I bone the chuck out both on the hook and sometimes on a block depends on my mood.

When that guy left half of the freaking sirloin attached to the pelvic bone and then tossed it in the bone can I almost **** myself, you couldn't get away with slop like ever.
Is there a better video? I pretty much pull loins and tenders, cut large roasts from hinds, shoulders (my favorite) and necks. I usually grind the rest. I don't really care for the steaks except the backstraps wrapped with bacon. I have almost no waste except some of the flank.
As far as breaking it down, I really like the way Grant from growing deertv does it. I have not seen the one put out by Kentucky wildlife but heard it's also good.

Could you post a link for a good video for us? I know you've posted links to some good vids in the past, and I always enjoy the ones you recommend. I know I end up wasting a lot more meat than I should. I know I do a better job now than when I first started, but there's still loads of room for improvement
