Stuffed and bacon wrapped back strap!

    Smoked cream cheese jalapeño stuffed back strap wrapped n bacon. Butterfly venison. Pre lay a nice bacon weave. Mix smoked cream cheese and jalapeño garlic powder onion powder. Spread on inner of back strap. Close straps and role n bacon weave. IMG_4503.JPG IMG_4505.JPG

    I do something very similar but make them as an appetizer. I slice the backstrap thin (medallions) and marinade. Then I spread the cream cheese on them with a slice or two of jalapeno. Roll them up and wrap with bacon. I find that the cheap, thin sliced bacon actually works best. This way you can cook the bacon without overcooking the venison. It's my go to appetizer for family get togethers and parties. They never last long.
