Stuffed with some cream cheese, pesto and sun dried tomato. Put a light sear on it on the grill.

    Oh my!

    Found an old pic...

Made some for vd today stuffed with cream cheese, spinach cashews and mozzarella. Bout to try it out but it smells freaking awesome. Filleted the back strap and stuffed it with the mixture I made in the kitchen aid that I bought her for vd. I win! !!

Those both sound great. I have some marinating that I plan on frying up tonight!

This thread is ironic. Just last night me and my Pop treated ourselves to backstrap from my Nov buck. It was DELICIOUSLY tender!! I love deer meat.

We marinated up some tenderloin with Italian dressing and then wrapped it in bacon and grilled it on indirect heat, then finished it on the direct heat. It was amazing!

I forgot I even started this thread.

Though not backstrap I made venison tacos, but more like a Bahn mi/taco highbred. Quick pickled carrot threads, cucumbers, greek yogurt, some greens, herbs, seasoned deer heart, a smidge of cheese.
