Recipe for a good deer burger??

    Does anyone have a good recipe for a good deer burger? My wife doesn't care to much for deer meat would love to get her to love it as much as I do. So need a amazing recipe for a deer burger that will grab her attention... help me out!

    My "city girl" wife has been the same way until I started having the butcher use bacon for the fat when he ground up the burger. In fact with last years deer my wife quickly added, "hamburg the whole deer, OK?"

    I always dice up bacon and add it to my deer burger. Many family members are not a fan of deer but they ate the crap out of those burgers. Besides basin I just add season salt onion and garlic powder.

    Like the other guys I mix bacon in with mine and I just use salt, pepper, garlic powder and onion powder.

    we grind ours up w pork fat. My butcher gets it from where he works. sometimes we add bacon and/or finely chopped onion in the patties is always good... important to have a good burger press to really press and hold the meat together as well. I bought some really heavy metal one at cabela's and love it.

    I don't add anything when grinding meat. It allows me to use it in various ways besides just a burger .

    More important to me is how the deer is killed and then how you prep the carcass. The quicker/cleaner the kill the better tasting and the more blood you can remove the less "wild gamey" flavor there is. I get more people to like wild game if I'm careful how I prep it.

    I grind up 75% deer, 20% beef, and a pound of bacon. Makes awesome burgers!

    We just made some burgers with 50% Elk 50% Wild Boat and mixed some cheese in with the meat.

    Really good.

    I don't like to use raw pork fat b/c I like my burgers med/rare. So I grind/freeze mine plain w 10% beef fat so it can be used in anything. But when pattying up a pound of burgers I add about 1tbsp of melted bacon fat, then the above with a dash of lawrys, 2 tsp of Worcester sauce, 1 whisked egg, and half a cup of oatmeal. The egg and oatmeal help bind and keep it moist. You can also use dried/minced onions instead of powder, just add a bit more Worcester sauce or half a cup of beer.

    It's delicious. Admittedly it helps to shoot a younger deer. I always start new game eaters on young deer meat. Fastest way to turn off a new game eater's taste buds is to serve them a randy old buck that was shot towards the end of the rut.

    Lots of good ideas in the thread, but when I grind mine I remove all (or as much as possible) silver skin, connective tissue and fat. So I have as lean as possible meat to start with.

    I'll doctor mine like dnoodles, but use panko (holds the moisture), some dried onion (flavor and holds moisture), a splash of some liquid (water, beer, wine, worstershire, soy sauce), egg to bind, a spoon of beef base (it's like bullion without all the salt and it ups the umami for us foodies), salt, pepper and some granulated garlic.

    Fat either from some bacon drippings or a mix with 80:20 beef.

    Hmm...I can't find a permit to kill a wild boat anywhere. :lol:

    Simple burger, make a patty and add liberally to a hot skillet. Salt and pepper to taste. Garnish with onion, pepper, mushrooms, lettuce, bacon, another patty a bun a slice of fresh mater and an ear of sweet corn dipped in butter.

    I always use pepper, garlic salt , onion powder, but I use shredded cheese in lieu of any fat, though sometimes I throw the bacon in. My wife used to despise deer and now lives the burgers. Past 2 years at least 2 deer are completely hamburgered out.

    But I have agree with what has been said. The preparation of the meat goes a lot further than the ingredients.

    brown 1lb ground deer, season to taste with salt, pepper, onion powder, garlic salt
    once browned at a can of onion soup
    simmer broth down

    get hamburger buns, put a little butter on the buns, eat with side of potato chips
    super easy to make, tastes good as left overs
    easy to make and warm up at deer camp

    Yes, I have the butcher add bacon to the grind before I get it. Wife and daughter love it !

    garlic powder or salt, onion powder, oregano, salt and pepper, a dash of cayenne pepper. just mix the seasonings until it smells delicious!
